Picadillo-ish Quinoa (Vegan Cuban Style Picadillo)


2 1/3 cups cooked Quinoa Mix cooked in veggie broth

1/3 cup raisin

1 1/2 tbsp tomato paste 1 2/3 tbsp

2 tsp caper, chopped

1 1/2 vine ripened tomato, chopped (or 2 roma)

1 1/5 cup chopped onion

11 manzanilla olives (green olives w red pimiento), chopped 

2 cloves smashed garlic

1/4 tsp fenugreek

1/4 tsp oregano

1/2 tsp cumin

1/4 tsp tumeric 

1/4 tsp salt, more to taste

3 tbsp extra virgin olive oil

A splash of veggie broth 


1) heat olive oil over medium heat, add above ingredients and cook until the tomatoes, onions and olives begin to lose their structure. Stir occasionally and if mixture dries out add a splash of veggie broth.

Let cook until tomatoes, onions and olives start to lose their form and disintigrate.
