Cheezy (vegan) Polenta/Grits

This is quick and easy when you’re in a hurry! 😃

1 cup cornmeal

3 cups water

1 1/2 cups almond milk

2 tbsp olive oil

1/4 tsp dried sage

2 garlic cloves, smashed

4 1/2 tbsp vegan butter, margarine 

1/2-2/3 cup nutritional yeast, to taste


1. Heat olive oil on medium heat.

2. When oil runs like water when you move the pan, add sage and cook until it becomes fragrant, then add garlic and cook until you can smell the garlic.

3. Add cornmeal, mix.

4. Add almond milk, vegan butter, water and nutritional yeast.

5. Let it come to a rolling simmer and cook until tender.

If the polenta dries out, or you want it a little looser, add more almond milk.

Serve alone as a sinful snack or with grilled veggies as pictured above. ☺️
