2 cups cooked cannellini or great northern beans
2 tbsp robust EVOO (i like koreniki- delish)
2 tsp garlic paste (approx 5 cloves smashed with 1/2-2/3 tsp himalayan sea salt, to taste)
3 pinch cayenne
3/4 cup parsley, chopped
1 tsp fresh sage, chopped (approx 10 leaves), you can also use 1/8 tsp dry, but the flaors will not pop as much
Juice 1/2 lemon. (about 1/8 cup)
Heat olive oil over med-high heat.
When olive oil runs like water in pan when you tilt it a little (but is not smoking), add parsley, sage, garlic paste and stir in pan until mixture is evenly coated with olive oil and garlic has become fragrant. (Maybe 30 seconds).
Now add spices and stir into olive oil, this will bring out the flavor of the spices; they only need a few seconds.
Now add beans and stir spices into them, let them cook a few minutes so that they are heated through and the flavor develops a little. Next add lemon juice and let cook a couple of minutes more, stirring occasionally and then shut off heat.
Enjoy with warm pita bread.
