Frijoles de la olla

1 lb dried flor de junio (silvia) beans or pinto*

1 serrano pepper

5-6 garlic cloves, smashed just to remove outside husk, but not demolished

2/3-1 chopped medium whute or yellow onion

2 large bay leaves


Pressure cooker

If using for refried beans:

1. Pick thru dry beans and remove any that are cracked, broken or moldy.


2. Rinse beans well.

3. Add chopped onion, garlic, bay leaves, serrano and beans to pressure cooker; fill to a couple a inches below top of pressure cooker and seal.

2. Cook on high pressure setting for one hour.

3. Release steam.

*flor de junio beans (silvia) are available at rancho gordo or their website; they are a beans from central mexico and make the silkiest refried beans ever! If you cannot find them, pinto are the norm.
I will add directions to cook for a beans soup at a later date, sorry no directions yet :/
