My favorite salad in the world is ceasar salad. There is a place in California (I prefer the one in San Diego) called the Veggie Grill. Almost everytime I go, I get their ceasar salad.
The first time I tried it, it boggled my mind that it was vegan. It was amazing; creamy, tart, crunchy, garlicky…mmm That was the best.
Obviously, I can’t eat out every day and you know I can’t live without my ceasar salad, so I created my own. This is one of my favorite things to do; my husband and I love to eat out and try new things anytime we go anywhere. I’m infamously excited and distracted, decoding all the flavors and thinking of what would enhance the flavors.
My husband now likes my version of this salad better than the original 😜; I hope you enjoy it too. Unlike a restaurant, it comes with a low fat option for those who care about such things.

1 package grape tomatoes
2 bunches lacinto kale, destemmed and chopped
1 large head romaine lettuce
20 pitted kalamata olives
Roasted garlic cloves
Red, yellow or orange bell pepper
Shredded red cabbage
Organic radishes, thinly sliced
Cooked garbanzo beans
For dressing: (*IF YOU ARE ON A DIET, JUST TAKE ONE TO TWO TSPS OF THIS MIXTURE AND ADD LEMON AND SALT TO YOUR SALAD AND IT WILL BE AMAZING, 😋)
1/2 generous tsp mashed garlic
5 tbsp just mayo
1/2 cup + 1 tbsp extra virgin olive oil
1/2 tsp vegan worchesterchire
1/4 tsp dijon mustard
1/4 tsp sea salt, more to taste
1/4 tsp reduced sodium soy sauce
2 1/2 tsp lemon juice
1/2-1 tsp nutritional yeast, to taste
1/2 kalamata olive smashed into a paste
To top salad:

Good croutons – I like semifreddi’s super garlic croutons (you can make your own if you’re feeling ambitious- recipe to come in future!😊)
1 package smart bacon
1) First soak/ massage your kale. Add kale to salad spinner, fill up and add a splash rice wine vinegar, juice 1/2 lemon and pinch salt; massage and squeeze ur kale for a min or two and then let it set in this mixture around 20 mins. Then return and massage another minute or two and wash well. I usually wash mine three times really thoroughly. Wash it until water runs clear, not green.
2) meanwhile, make dressing. Start with mayo, combine with whisk with all the other dressing ingredients, except extra virgin olive oil. When it is well combined, whisk in EVOO little by little so that it will emulsify and not turn all clumpy and seperated. 😝😋
3) cook bacon until it is very crispy and let cool. Then put in plastic baggy and smash to make bacon bits 🙂
4) assemble salads individually, as pictured. First lettuce, then red cabbage and organize other ingredients in a pretty design. I like to put a handful of tomatoes in one corner, then next to it, a handful of cucumbers then about 5 kalamata, half and avocado, if ur not on a diet. Then I put parm scattered over the lettuce. Then in the middle, i put a tbsp or 1 1/2 tbsp dressing, then half a 1/4 of bacon bits and i put croutons around bowl.
